I want to hook up my cable box's digital coaxial output directly to my 5.1 computer speaker system, which takes three inputs (front/rear/center+sub). Any adapter to do this? Having trouble googling it.

Currently I have the regular RCA L and R outputs hooked up to the "front L and R" input on my sub, but I want the surround sound.

You are going to need a receiver to make that happen. There is no cable that can convert digital signals to analog unless there is a decoder in-between the source and the speaker.
