i have a sony 1200 watt amp with 500 rms 2 channels and a pioneer premium with 2500 max and 800 rms dual voice coil 2 ohm how should i go about wiring this ive never had a dual voice coil sub and it confuses me

You'll need to bridge your amp down to a single channel and wire your sub in series as the first diagram on the left hand side depicts.
