ok i have bought 2 kicker 10" L7 subs and i am pretty new to all of this and i am wondering if the kicker kx 1200.1 will power both subs up to or pretty close to their full capabilities.

yes
thermal power handling and the amount of power needed to reach full excursion are very different things.
"power handling" is a measure of the ehat the coils can handle without thermal damage.
