i have two 12" pyle 1000w subs in a sealed box with 800w 4 channel power acoustik amp, need help finding the right settins and if i should run the subs down to 2ohm, the amp is 2ohm stable

Hey Brian, I hope that amp will actually produce. I hear they mostly die out at high volumes.
Anyhow, you can operate the amp in bridged mode. This should give you 2 channels for each sub. If your subs are DVC 4ohms, you can turn wire each sub in parallel for 2ohms. This should give you 2ohms for each channel.
