New to the audio/video world and wondering peoples' thoughts on HDMI vs optical audio - should I still use my optical cables for audio?

No. One or the other. Exact same quality in audio.

The other michael is correct. HDMI allows your high video resolution and digital audio to run through the same cable, where with DVI (precurser to HDMI), only the video runs through that cable and a separate cable must be used for your digital audio. Basically it just uses one cable instead of two to accomplish the same thing. Doubt you will notice any difference in sound between HDMI audio cable and optical (Toslink).
