I have a dav-dx250 Sony surround sound system... I also have a HD/DVR cable box from Charter Communications... I want to hook the cable box up to the surround sound receiver so that I can enjoy the HD programming in 5.1 sound...

To do this, I need to output from my cable box using the S/PDIF jack... that is all fine and dandy, but my surround sound receiver only has analog (red and white) audio in jacks for connecting external devices...

Will this work? Will I need to buy anything else?!

If the surround receiver does not have S/PDIF or TOSLink (optical) inputs, then you cannot get 5.1 audio from the cable box to the receiver. You can't listen to cable 5.1 audio with this system, but it might have a setting to 'simulate' surround sound from a stereo input.

I was afraid of that... I find it hard to believe that someone would make a surround sound receiver without an S/PDIF or optical input...

What are some of the models that do?
