I am installing a sony Cineza vpl-hs51 in a light controllable (narrow) room.

I need a screen. What would be my best choice.

White vs grey, what gain etc.

I know I liked the stewart firehawk that was on display - but would like to keep the cost under $1000.00

If you have the option pick some flat white paint, and paint a screen. Use a couple coats, im very impredded how good it looks. i made a border spray painted it flat black. For under $20 this compares to some of the best screens out ther. People come over and touch it because they think its a real screen.
