Will an S-Video cable make any difference in recording quality? Going from a DVD player to DVD recorder? Or from VHS to DVD recorder?

Or is it just for going to the TV?

Depends on the eqiupment, sometimes yes and sometimes it may actually be better composite.

Whenever possible, yes. If copying anything that's copy protected, no. My stabilizer only has composite connections.
