Currently use Panasonic SL-NP1A (1991) CD Player and Yamaha RH5MA Headphones. The sound quality experienced here is exceptional! However, I need to get a little more portable but I don't want to sacrifice in any way sound quality. I have heard IPOD's already and the sound quality is poor. I thought Mini Discs would be the next step to greater portability and no sacrifice in sound quality. Unfortunately, the U.S. market has not been kind to this product. Any thoughts on this?

Sure, you can use Mini Discs. The driving force behind mp3 is the amount of songs, not the quality. But, honestly, a well-recorded mp3 really does not sound that bad.
