I've never understood what the single video input on an amp is for.

Anyone care to educate me?

I assume you are speaking of the composite video input. It carries video signals that are wrapped together in the most convenient, though not highest quality, package available. Though it separates the video from the audio signals it does not give the separation of of the video signals that an S-video (chroma/luminance)or component video (RGB sync) input offer.
