I listened to the POLK RM6900 because esthetics are VERY important to my wife, and I thought they sounded great. They are a little more than I wanted to spend, but I'm thinking that if I get the Panny XR-55, that would balance everything out. Would this be a good setup?

Those Polk sats are surprisingly not that bad for the money. I'd get small bookshelves instead but hey that's marriage.

The weak point in that setup would be the Polk sub but if you're already pushing your budget then you'll just have to live with it.
